Masala Fries


  • Potato
  • Onion
  • Capsicum (Green Pepper)
  • Ginger Garlic Paste
  • Curry Leaves
  • Fresh Coriander (Cilantro)
  • Red or Green Chilli
  • Cooking Oil
  • Tomato Ketchup
  • Chilli Sauce
  • Spices: Salt, Turmeric, Black Pepper, Red Chilli Powder, Coriander Powder
  • Misc Herbs: Basil, Oregano, Thyme as per availability

Cooking Instructions:

  1. Cut potatoes vertically into long slender pieces
  2. In wok or deep frying pan, add cooking oil sufficient to deep fry potatoes
  3. Fry potatoes till golden brown
  4. Drain excess oil using tissue paper
  5. Dice onions, capsicum, green or red chilli
  6. In frying pan, add 1-2 spoons of oil
  7. Add vegetables: onions, capsicum, red / green chilli and curry leaves
  8. Add ginger garlic paste
  9. Fry till vegetables become slightly tender
  10. Add potato fries
  11. Add salt, turmeric, red chilli powder, black pepper, coriander powder, chilli sauce and tomato ketchup as per taste
  12. Add fresh coriander and misc herbs (basil, oregano, thyme if available)
  13. Mix well

Cooking Preparations:

  1. Potatoes cut vertically into long slender pieces

2. Vegetables (onion, capsicum, green chilli and curry leaves)

3. Frying potatoes in wok pan

4. Soaking excess oil from potato fries on tissue paper

5. Stir-frying vegetables

6. Adding potato fries, herbs, spices and sauces
